Rillettes (ri·yèt) are a preparation of meat similar to pâté. The meat (most commonly pork, duck, or chicken) is cubed, salted and cured, cooked slowly over low heat until very tender, then raked into small shreds and blended with the warm cooking fat to form a creamy paste. Served at room temperature, it makes a delicious and spread on bread or toast and an ideal companion for sweet and salty pickles. Or accompanied with mustards or mostarda (an Italian fruit and mustard condiment).
