Bonrus: cheese of the month June

Bonrus

A Northern Italian cheese made from a combination of pasteurized sheep's and cow's milk, Bonrus looks like a little pillow. Underneath its bloomy rind, the texture is semi-soft and smooth, runny on the outside and firmer near the center. The flavors are mild, sweet, milky, and herbaceous, with hints of dried fruit.

Good to know: 

  • The unique pillow shape supports the maturation process.
  • The smell is a lot stronger than the taste, which is quite mild.
 
Serving ideas: with pears and honey on baguette

Pour a glass of a dry, medium-bodied red wine with refreshing acidity and low tannins, like a Barbera. Or a sparkling wine!
