An Intimate August Wedding
Like most couples, Rachel and Starbuck's catering journey began one year prior to their wedding day. After reserving their August date at The Evergreen, they began working with Sarah, our Senior Events Planner, to customize their menu and event rentals. After a few months of discussing their details, they signed their quote and reserved their date! Officially choosing Elephants Catering + Events to cater to their big day.
One short month later, COVID-19 paused their plans. Throughout Spring, the couple and Amanda, their coordinator, discussed with Sarah the different options available. Wait it out in hopes that things would clear up by August? Postpone the wedding to a different date? Or host a more intimate gathering on their original date? Ultimately, they moved forward with option #3 and planned an intimate 30-person wedding at their home. Sarah was able to easily adjust their menu and able to transfer their initial deposit to the new contract.
“They were really flexible and understanding about all the new COVID regulations that got thrown their way and even though we didn't have our staff on-site for the event, I worked with their planner to figure out equipment needs, serving ware, etc. for a buffet-style meal service that they set up themselves.” - Sarah Woelfle, Elephants Catering + Events
In spite of current guidelines and restrictions regarding events, we were still able to provide and deliver a full-service-level meal. Sarah worked closely with Amanda to determine the equipment and serving items needed. The couple's menu consisted of fan favorites, both new and old.

Surrounded by their closest friends and family, Rachel and Starbuck said “I Do” just before sunset at their home in Portland. Appetizers were set out for guests to enjoy after the ceremony while watching the couple share their first dance. Soon after, guests made their way to the backyard area for the reception. It was beautifully styled with wood tables, greenery runners, and candlelight -- the perfect outdoor wedding!
